How to make Japanese cotton cheese souffle/ cheesecake (recipe)

INGREDIENTS:

- 125 gr cream cheese ,
- 110 gr whipping cream (35 - 40% fat),
- 3 egg yolks (18 – 20gr/ yolk) ,
- 20 gr sugar,
- 50 gr cake flour,
- 20 gr corn starch,
- 3 ml (1/2 tsp) vanilla extract, 

- 3 egg white (33 – 35 gr/ egg white) ,
- 50 gr sugar ,
- 1 gr (1/4 tsp) cream of tartar (you can replace with lime juice or rice vinegar with the same amount).
