INGREDIENTS:

A. For the cheesecake:

4 g gelatin (both sheet and powder are fine),
30 ml water,
24 Oreo cookies,
40 g (3 tbsp minus 1/2 tsp) unsalted butter ,
250 g cream cheese - softened at room temperature ,
45 g (3 tbsp) caster sugar ,
1/2 tsp vanilla extract ,
200 ml (3/4 cup + 4 tsp) cold whipping cream (30 - 40% fat).

B. For the sauce:
200 g mango - cut in small cubes ,
4 passion fruits ,
60 ml (1/4 cup) water ,
20 - 40 g (1.5 - 3 tbsp) caster sugar (to taste) .

INGREDIENTS:

- 125 gr cream cheese ,
- 110 gr whipping cream (35 - 40% fat),
- 3 egg yolks (18 – 20gr/ yolk) ,
- 20 gr sugar,
- 50 gr cake flour,
- 20 gr corn starch,
- 3 ml (1/2 tsp) vanilla extract, 

- 3 egg white (33 – 35 gr/ egg white) ,
- 50 gr sugar ,
- 1 gr (1/4 tsp) cream of tartar (you can replace with lime juice or rice vinegar with the same amount).
